In Monferrato and Langhe, the hazelnut 'Tonda Gentile della Langhe' (TGL) is almost exclusively grown, the fruits of which have a very exceptional quality. In 1993, the TGL was awarded the Protected Geographical Indication (IGP).

Hazelnuts have provided the population of the hilly and mountainous areas of the Apennines with an important nutritional value. They probably already knew about the rich food characteristics. Moreover, it seems that the consumption of collectors who traveled through Europe between 8 and 9 thousand years ago.

Even more nutritious are chestnuts with more digestible fats than any other oilseed, including the walnut. These were traditionally used for consumption and in particular in the culinary sector. Nowadays, well-roasted hazelnuts are used in cooking in sweets to replace or accentuate the taste of cocoa or coffee, but their pleasant aroma and intense taste are also a special addition to roast meats.

However, the incomparable taste of these small, spherical nuts is not least due to the careful processing after harvesting. Piedmontese hazelnuts are grown for several days in the late summer sun after harvest. They are then cracked, after which they are carefully roasted. They then go into a roasting oven, where they are roasted for about 30 minutes at a low temperature of up to 150 °C. This intensifies the delicate aroma of the raw hazelnuts in the best possible way, and the bite becomes crunchy and crumbly instead of stony and hard.
Finally, the cooled nuts are vacuum packed so that anyone who opens the bag can smell and taste the freshly roasted aroma. You can't really compare their taste to that of their peers, but rather to that of the best truffle chocolate.
